Menu - Week of January 11, 2010

Did I mention that during our trip to New Orleans over winter break, I discovered Muesli? I love it!!!!! I have to have it for breakfast every day. It is SO good. There are so many recipes out there, but below is the one I use. Mind you that this packs in lots of fiber and keeps you feeling full until lunch time (ie., not low in calories, but they are good calories!)

Muesli
--------

1/2 cup rolled oats
1/4 to 1/2 of a small unpeeled apple, chopped
1 T. raisins
1 T. almonds
2 T. wheat germ
3/4 cup water
2 teaspoons sweetened condensed milk
Sprinkle of cinnamon

Mix all in a small bowl. Stir until sweetened condensed milk is dissolved. Let sit for 5-10 minutes before eating. Wow. What a delicious mess.

My mother-in-law is visiting and we have several friends celebrating birthdays this week so we are not eating at home evey evening, but here is the plan for this week:
  • Monday - Pollo con Calabazita y Elote (recipe in previous post), Fresh Pineapple Chunks, Veggie Tray (red peppers, cucumbers, carrots)
  • Tuesday - Dinner at Friend's House
  • Wednesday - Birthday dinner for friend at restaurant
  • Thursday - Roasted Chicken Thighs, Baked Potatoes, Broccoli, Corn-on-Cob, Veggie Tray, Canteloup Slices (carrots, celery, mushrooms)
  • Friday - Sushi! Orange slices
  • Saturday - Shrimp PoBoys, Sweet Potato Oven Fries, Watermelon Slices
  • Sunday - Something funky from my new Cooking Light Magazine!
