Menu for Vegetarian Week (March 7 - 13, 2010)

My husband has been asking me to make more vegetarian dishes because we could both use less meat so I thought it would be fun to go a whole week eating delicious vegetarian food that does not involve pasta or lentils. (I can't stand lentils. Their consistency feels very strange to me.)

Based on what I have in the pantry, refrigerator, and freezer, here's what I have planned for next week:

Sunday - Roasted Vegetable Salad with Dijon Dressing (whatever vegetables I have in the fridge and I still have some Romaine Lettuce Hearts that need to be used up), grapes, cucumber spears with dip.

Monday - (Baseball Night) - Cheesy Broccoli Soup and Spinach Salad, Pineapple Chunks

Tuesday - Dinner at a Friend's house. (Bringing wine and cheese.)

Wednesday - Crepes with Caramelized Onion, Feta, and Spinach Sauce (I hope it tastes as good the ones sold by the Crepe Ladies here in Austin!), Apple Slices, Carrots with Dip

Thursday - (Soccer Night) - Aloo Gobhi Masala, an Indian recipe with cauliflower and potato in a spicy sauce, and Jasmine Rice. (I can make it in advance and have dinner when we get home from soccer. ) Steamed Edamame, Melon Wedges.

Friday - Portobello Mushroom Burgers, Spinach Salad (if we have Spinach Leftover otherwise, steamed broccoli), and Strawberries

Saturday - Falafal Sandwiches (if we haven't left on our Spring Break mini-vacation)

Can't wait to try all this food!!!!

Peanut Butter Chocolate Chip Granola Bars

My husband's cousin Carrie cooks and bakes with her kids regularly. Inspired by her enthusiasm for sharing the joy of cooking with kids, I decided to try a new recipe last night with Daniel: energizing muesli bars.

I found this recipe in a book called Cookies! by Pippa Cuthbert and Lindsay Cameron Wilson. It was so easy to make and the girls loved it. After all the time that Daniel spent stirring everything together and tasting the mixture every few minutes, he decided it tasted too much like peanut butter for him. My hubby thought they were too sweet. I agree with him. The sugar content is kind of high so we will have to modify the recipe so it has less sugar. Here it is:

Energizing Muesli Bars

Makes about 24 squares

1 stick butter, melted
generous 1/2 cup light brown sugar
3 heaped Tbs of creamy peanut butter
1/4 cup honey (the recipe calls for corn syrup, but we are trying to be healthy right?)
2 cups dry quick oatmeal
1/2 cup wheat germ
3/4 cup unsweetened, shredded coconut
5 1/2 oz. chocolate chips
generous 1/2 cup Rice Krispies
generous 1/4 cup sunflower seeds (or any nuts, chopped)

Preheat oven to 350 F.

In a medium-size bowl stir together melted butter, brown sugar, corn syrup, and peanut butter until smooth. Combine remaining ingredients together in a separate bowl. Add the peanut butter mixture and mix well until combined.

Press the mixture into a greased 9-in square pan. Bake for 25 minutes, or until the top is golden. Allow to cool, then cut into squares.

We didn't put the coconut or the sunflowers in it, but used crunchy peanut butter instead. My kids didn't want to put in the coconut.

Asian Chicken Salad

We had so much lettuce leftover since our plans changed last weekend, that I made a huge salad last night for dinner. A friend makes it a lot and hers is very tasty, but the dressing I found on epicurious is my favorite so far!

Asian Chicken Salad

For the salad:
4 Romain lettuce hearts, washed and cut (or 8 cups of torn Romain leaves)
1/4 bunch of cilantro, chopped
1/2 bunch of green onions, chopped (not the white parts)
12 oz. can of chicken breasts in water, drained and flaked (or use whatever shredded chicken you have)
12 oz. can of mandarin oranges, drained
1/2 cup sliced almonds, toasted
2 tablespoons sesame seeds, toasted

20 square wonton wrappers
canola oil, for frying wontons

For the dressing:

1/4 cup canola oil
1/4 cup tamari or soy sauce
1/4 cup fresh lemon juice
1 tablespoon sesame oil
1 tablespoon distilled white vinegar
2 tablespoons sugar
1/4 tsp pepper

The recipe calls for fried wontons which taste pretty good, but I didn't have them and it didn't affect the recipe. I also didn't "toast" the sesame seeds or almonds and it was still great! You are supposed to cut the wonton wrappers in strips and fry 5-6 at a time in hot oil for 30 seconds, turning over once with a slotted spoon. Let sit on paper towels while you get the other ingredients ready.

Place all salad ingredients in large bowl. Whisk dressing ingredients in small bowl. Pour over salad and toss thoroughly. Serve immediately.

Menu - Week of February 28, 2010

I still have a fridge full of lettuce and stuff to make mini bagel pizzas!!!! How did this happen you ask? Let's see my brother made dinner for us Tuesday night. We had Chick-Fil-A school spirit night on Thursday. We were invited to a playdate that turned to dinner on Friday and ended up going out for my friend's birthday instead of having a potluck at her house.

This means that we still have tons of food in the house. Therefore, my grocery bill will be less than $100 for sure!!! So after 1) looking in the fridge, the freezer,and the pantry, 2) thinking about breakfasts, lunches, and snacks, and 3) looking at our activities for the week, here is my plan:

  • Sunday - Garden Salad, plus Grilled Cheese for the Kids (to use up the lettuce and bread we have left over), Grapes
  • Monday (baseball practice) - Asian Chicken Salad (to use the lettuce), Red and Green Bell Pepper strips with dip, Pineapple Chunks
  • Tuesday - Bean Soup, Rice, Carrots with dip, Strawberries
  • Wednesday - Broiled Scallops, Steamed Edamame, Rice Pilaf, Orange Wedges
  • Thursday (soccer practice and baseball practice) - School Spirit Night at Chick-Fil-A
  • Friday - Spinach Lasagne, Steamed Broccoli, Apple Slices
  • Saturday - (Soccer Game and Explore UT-all day) - We are eating leftover lasagne for dinner.

Broccoli and Cauliflower Soup

This recipe was so easy and so good! I got it from the Eating the Greek Way cookbook. Here it is:

Broccoli and Cauliflower Soup

3 T. olive oil
1/2 a large onion, sliced
1 head broccoli, cut into flowerets
1 head cauliflower, cut into flowerets
4 cups water or vegetable broth
salt
pepper
red pepper
1/2 cup yogurt or half and half or milk

Heat oil in large saucepan. Saute onion until soft, about 10 minutes. Add broccoli and cauliflower and saute for five minutes. Add water and bring to a boil. Let simmer for 10 minutes. Puree mix in blender. (Leave vent open so contents don't explode, but cover vent with clean dish cloth.) Return to saucepan. Add salt, pepper, and red pepper to taste. Stir in yogurt. Serve with crusty bread and a salad.

Menu - Week of 2/21 - 2/27 and Grocery Shopping 101

A friend of mine asked me how I am able to keep our grocery bills under $100 so I am hoping to update this blog more regularly so she can see how I'm doing it.

For this week, I checked my refrigerator, freezer, and pantry to see what I have already. I found lots of ice cream, a bag of frozen chicken thighs, a bag of frozen tilapia, frozen edamame, frozen artichoke hearts, frozen corn, broccoii, cauliflower, cucumbers, tomatoes, red pepper, lettuce, spaghetti, prego sauce, champagne salad dressing, balsamic dressing, and rice.

When I make my menu, I also consider what activities we have that week and what items are in season (ie, on sale at the store). So with all that in mind, here is what I came up with for this week:

  • Sunday (today) - Savory Chicken and Rice (recipe posted separately; check under labels on the right), Wedge Salad (Cut up Iceberg Lettuce into wedges, rinse, and dry. Then drizzle each wedge with Ranch dressing.), Edamame, Fruit and Icre cream for dessert
  • Monday (baseball practice so need something quick!) - Baked Tilapia (fish with butter and tony cacheres; cooks in 15 minutes), white rice, steamed artichoke hearts, grapes, carrots
  • Tuesday - Broccoli and Cauliflower Soup (this makes a big batch so we have some for tomorrow), French Bread, Romaine Salad (Cut up Romaine Lettuce enough for two nights, Shaved Parmesan Cheese, store-bought Champagne Dressing), apple slices
  • Wednesday (baseball practice so leftovers are good) - Leftovers
  • Thursday (soccer practice so need something quick again!) - Spaghetti, Italian Salad (Romaine Lettuce, Cucumbers, Carrots, Tomatoes, store-bought Italian Dressing or Balsamic Dressing), pineapple slices
  • Friday (we get home late because of activities at school) - Make-Your-Own Pizza night (bagels, olive oil, prego sauce, shredded mozzarela, pizza toppings)
  • Saturday - Friend's birthday dinner out (will bring wine and salad)

Given that I had all those staples already in the house, my grocery list is smaller. I usually keep a list on the refrigerator to write down items the minute we find we are out of them. This week I discovered I am out of garlic salt and tabasco sauce! Since these are staples in our house, it has to go on this week's list.

I also check the pantry/fridge for kid snacks (hummus, pretzels, granola bars, veggie chips, cheese sticks, etc.), and stuff to make for breakfast (OJ, breakfast tacos, bagels, cereal, waffles, bacon, etc.) or to pack lunches (bread, ham, pb and j, applesauce, raisins, carrots, etc.).

Finally, I make my list by store aisle. It's easier to remember items this way. Here is the whole grocery list for this week:

Produce: Strawberries (4), Grapes (4), Pineapple (4) (or whatever is on sale), Bananas (4), Carrots (2), Potatoes(2), bulk Mushrooms (1), Romaine Lettuce (3.96 for six hearts!) - $29

Breads: 100% Whole Wheat Bread (2), HEB Flour Tortillas (4), HEB Mini Bagels (3), French Bread (2) -$11

Deli: Danish Ham (1/2 lb.) (3), Turkey (1 lb.) (5), Mozzarela Sticks (5), Shredded Mozzarela (3), Bacon (4) - $16

Cereals/Dry Goods: Garlic Salt (3), Tabasco Sauce (2), Prego Sauce (2) (1 more bottle for pizza night), cereal bars (2), granola bars (2), veggie chips (2), (as a treat for my son, every now and then I surprise him with his favorite fruit juice - V8 Strawberry Banana Fusion (3)) - $16

Dairy: OJ (3), Milk - 2 Gals. (8), Eggs(2) , Creamer (3), Cream Cheese (1) -$16

Frozen: Pretzels (2) (also a treat for my son) - $2

Wine/Beer: Yellow Tail Cauvernet Sauvignon (6) - $6

Total Estimated Bill for this week: $96

Then I go back through the list and estimate how much each item is going to cost (number in parentheses after each item in list above) and sum it all up. This week, we are just on target. If it comes to over $100, then I have to shave something non-essential off the list and get it next week. That's what it means to live on a budget, right? :)

The most important thing is to not forget your list when you go to the store (and not to add impulse items) !!!

Menu - Week of January 11, 2010

Did I mention that during our trip to New Orleans over winter break, I discovered Muesli? I love it!!!!! I have to have it for breakfast every day. It is SO good. There are so many recipes out there, but below is the one I use. Mind you that this packs in lots of fiber and keeps you feeling full until lunch time (ie., not low in calories, but they are good calories!)

Muesli
--------

1/2 cup rolled oats
1/4 to 1/2 of a small unpeeled apple, chopped
1 T. raisins
1 T. almonds
2 T. wheat germ
3/4 cup water
2 teaspoons sweetened condensed milk
Sprinkle of cinnamon

Mix all in a small bowl. Stir until sweetened condensed milk is dissolved. Let sit for 5-10 minutes before eating. Wow. What a delicious mess.

My mother-in-law is visiting and we have several friends celebrating birthdays this week so we are not eating at home evey evening, but here is the plan for this week:
  • Monday - Pollo con Calabazita y Elote (recipe in previous post), Fresh Pineapple Chunks, Veggie Tray (red peppers, cucumbers, carrots)
  • Tuesday - Dinner at Friend's House
  • Wednesday - Birthday dinner for friend at restaurant
  • Thursday - Roasted Chicken Thighs, Baked Potatoes, Broccoli, Corn-on-Cob, Veggie Tray, Canteloup Slices (carrots, celery, mushrooms)
  • Friday - Sushi! Orange slices
  • Saturday - Shrimp PoBoys, Sweet Potato Oven Fries, Watermelon Slices
  • Sunday - Something funky from my new Cooking Light Magazine!
