New Menu for Week of February 7, 2011

Well, my menu got all messed up since I used the mushrooms to broil them along with the asparagus.  Here is the new and updated menu:

  • Monday - Roast Potato Hash, Broiled/Grilled Asparagus and Mushrooms, Salad with Champagne Dressing
  • Tuesday - Curried Lentils and Rice, Salad, Fruit
  • Wednesday - Spaghetti Primavera
  • Thursday - Black Beans and Rice
  • Friday - Sushi (store-bought)
  • Saturday - Vegetable Fajitas with Guacamole
  • Sunday - Pav Bhaji

Day 314: Roasted Potato Hash and Grilled Asparagus and Mushrooms

Last night I was in a hurry to get dinner on the table and decided not to make the Mushrooms a la King.  Instead I broiled mushrooms and asparagus, made a salad, and a Roasted Potato Hash that was delicious!!!!!
Below is the recipe.

Roasted Potato Hash

1 onion cut into large chunks
3 carrots cut into large chunks
2 large potatoes cut into large chunks

2 Tablespoons Olive Oil
1/2 tsp chili powder
1/2 tsp kosher or sea salt
1/4 tsp turmeric

1 cup spinach leaves, packed

Toss vegetables in olive oil.  Mix dry spices and sprinkle on vegetables.  Roast at 425 for 30-40 minutes until potatoes and carrots are tender.  Take out of the oven, add spinach leaves and toss until slightly wilted. Delicious!!!!

Grilled Vegetables

The mushrooms (1 large packet of white button) and asparagus (1 bunch) were marinated in 1/4 cup olive oil, 1/4 cup balsamic vinegar, 3 cloves galic minced, 3 T onions minced.  Then broiled for 5-7 minutes.  What a delicious dinner!!!!

Day 313: Menu for Week of February 7, 2011

My menu was thrown off last week because of the crazy weather and everyone being home on Friday.  We got 2 inches of snow in Austin, Texas!!!!!  Everyone had the day off.  It was awesome.  But with everyone home, it was hard to stick to the menu.  Friday night we ended up eating sushi that my husband picked up at the store, instead of the Mushrooms a la King.  Then Sunday it was SuperBowl so my Pav Baghi did not get cooked. That means I still have a ton of vegetables in the fridge.  I have all three kids at home today because they are sick, but here is my plan for this week:

  • Monday - Mushrooms a la King with Grilled Asparagus and Salad
  • Tuesday - Spaghetti Primavera (to use up all the old veggies: Kale, Calabazita, Corn)
  • Wednesday - Lentils in Tomato Sauce over Rice
  • Thursday - Grilled Portobello Mushrooms with Roasted Root Vegatables (Potato, Sweet Potatoe, Parsnips, Carrots) and Spinach
  • Friday - Sushi (We have the Mother Daughter Fashion Show today at school. Not sure what the food situation will be like.)
  • Saturday - Vegetable Fajitas with Guacamole, Refried Beans, and Rice
  • Sunday - Pav Bahgi  (see two previous posts for recipe).

Day 312: Super Bowl Vegan Feast

I did not make Pav Bahgi like I thought I would on Sunday.  I totally forgot that it was Super Bowl Sunday.  My husband loves having a huge spread of dips and finger foods to munch on while watching the game.  I went a little crazy and but we did not have a food coma afterwards like we have had other years when we do not eat such light food.  Here is the menu for our Super Bowl Vegan Feast:

  • Guacamole and Salsa with Tortilla Chips
  • Hummus and Pita Chips
  • Pan-Fried Vegetable Dumplings
  • Vegan Sushi
  • Vegan Buffalo "Wings" with Buffalo Sauce (Did not like the wings or the sauce.  The wings were Vegan "Chicken" Nuggets from Boca which I prepared in the oven.  They did not taste like much and they were too mushy.  The sauce was Stubbs Wing Sauce.  It was so disgusting. Too much vinegar and pepper.  The minute it touched my tongue, it made it hurt.  Yuck!  Next time I will make my own sauce.)
  • Broiled Marinated Vegetables (asparagus, portobello mushrooms, red pepper, and onions marinated in 1/4 cup olive oil, 1/4 cup balsamic vinegar, 4 cloves garlic minced, and 3 T chopped onion).  These were delicious!  I marinated them for 30 minutes and then broiled for 5 minutes.  Awesomeness!!!!

Day 309 - Caldo de Res sin Res is DA BOMB!!!!

OMG!  I did not think I would be able to pull off my Caldo de Res sin Res recipe, but I sure did.  Caldo de Res is a Mexican beef soup with tons of vegetables in it.  I remember my grandma used to make this on cold days.  She would use a beef bone and chop up some round steak.  She would pan fry the bone and steak and then add the veggies and spices. 

I decided to try it without the meat.  I started by putting 8 cups of water to boil.  I added 2 large garlic cloves (whole), 1/2 of a large onion (whole), 1 large tomato (cut in half).  All these dissolve in the water.  I brought that to a rolling boil and let it simmer boiled for 30 minutes, then added 3 carrots cut into thirds, chayote cut in large sections (this is a Mexican squash), corn on the cob cut into section and let that simmer for 30 minutes. Then I added 2 potatoes cut into large chunks, 1 large sweet potato cut in large chunks, 1/2 a cabbage cut into large sections.  I added some garlic salt to taste and then about 2 teaspoons of cumin and some pepper, to taste.  If you don't like your cabbage mushy, wait until the potatoes are almost cooked all the way through and then add the cabbage.  Once the potatoes are cooked through, add a couple sprigs of cilantro.  Serve over vegetarian (same as vegan) Mexican rice.  Enjoy!

Day 305 - Menu for Week of February 1, 2011

I can't believe we've been vegan for 10 months!  Don't miss much except my usual cravings for fried shrimp poboys, real beef fajitas, and huevos rancheros.  At the conclusion of our year of being vegan, I will try each one of these.  My husband thinks I am going to hate them.  He's probably right.  :)

It's the end of January.  We are expecting snow at the end of the week eventhough this weekend, we hit 75 degrees.  So since it's going to be cold, I am going with more soup and warm weather recipes. Here's my plan for this week:
  • Monday - Cheesy Broccoli Soup (with no cheese)
  • Tuesday - Tostadas (with Vegan Fajitas)
  • Wednesday - Three-Bean Chili
  • Thursday - Caldo de Res sin Res (My grandma's old recipe for Beef Soup with Vegetables but I'm making it without beef.)
  • Friday - Seitan and Mushrooms A la King over Noodles
  • Saturday - Steamed Vegetable Dumplings, Asian Salad, Veggie Spring Rolls (for Chinese New Year's Party at Friend's House)
  • Sunday - Pav Bhaji (An Indian dish from Spice Routes - This is a combination of cauliflower, green beans, new potatoes, carrots, peas, cilantro cooked in a tomato sauce with spices and served with tomato chutney on rolls.  Recipes looks busy so I am saving it for the weekend.)
