Day 312: Super Bowl Vegan Feast

I did not make Pav Bahgi like I thought I would on Sunday.  I totally forgot that it was Super Bowl Sunday.  My husband loves having a huge spread of dips and finger foods to munch on while watching the game.  I went a little crazy and but we did not have a food coma afterwards like we have had other years when we do not eat such light food.  Here is the menu for our Super Bowl Vegan Feast:

  • Guacamole and Salsa with Tortilla Chips
  • Hummus and Pita Chips
  • Pan-Fried Vegetable Dumplings
  • Vegan Sushi
  • Vegan Buffalo "Wings" with Buffalo Sauce (Did not like the wings or the sauce.  The wings were Vegan "Chicken" Nuggets from Boca which I prepared in the oven.  They did not taste like much and they were too mushy.  The sauce was Stubbs Wing Sauce.  It was so disgusting. Too much vinegar and pepper.  The minute it touched my tongue, it made it hurt.  Yuck!  Next time I will make my own sauce.)
  • Broiled Marinated Vegetables (asparagus, portobello mushrooms, red pepper, and onions marinated in 1/4 cup olive oil, 1/4 cup balsamic vinegar, 4 cloves garlic minced, and 3 T chopped onion).  These were delicious!  I marinated them for 30 minutes and then broiled for 5 minutes.  Awesomeness!!!!
