OMG! I did not think I would be able to pull off my Caldo de Res sin Res recipe, but I sure did. Caldo de Res is a Mexican beef soup with tons of vegetables in it. I remember my grandma used to make this on cold days. She would use a beef bone and chop up some round steak. She would pan fry the bone and steak and then add the veggies and spices.
I decided to try it without the meat. I started by putting 8 cups of water to boil. I added 2 large garlic cloves (whole), 1/2 of a large onion (whole), 1 large tomato (cut in half). All these dissolve in the water. I brought that to a rolling boil and let it simmer boiled for 30 minutes, then added 3 carrots cut into thirds, chayote cut in large sections (this is a Mexican squash), corn on the cob cut into section and let that simmer for 30 minutes. Then I added 2 potatoes cut into large chunks, 1 large sweet potato cut in large chunks, 1/2 a cabbage cut into large sections. I added some garlic salt to taste and then about 2 teaspoons of cumin and some pepper, to taste. If you don't like your cabbage mushy, wait until the potatoes are almost cooked all the way through and then add the cabbage. Once the potatoes are cooked through, add a couple sprigs of cilantro. Serve over vegetarian (same as vegan) Mexican rice. Enjoy!

I was feeling really sick and remember my mom making caldo de res for me; always helped.. but I'm Vegan now. So using your way now and I love it. Turned out great I just added three different peppers to spice it up.. thanks for the share.
