Last night I was in a hurry to get dinner on the table and decided not to make the Mushrooms a la King. Instead I broiled mushrooms and asparagus, made a salad, and a Roasted Potato Hash that was delicious!!!!!
Below is the recipe.
Roasted Potato Hash
1 onion cut into large chunks
3 carrots cut into large chunks
2 large potatoes cut into large chunks
2 Tablespoons Olive Oil
1/2 tsp chili powder
1/2 tsp kosher or sea salt
1/4 tsp turmeric
1 cup spinach leaves, packed
Toss vegetables in olive oil. Mix dry spices and sprinkle on vegetables. Roast at 425 for 30-40 minutes until potatoes and carrots are tender. Take out of the oven, add spinach leaves and toss until slightly wilted. Delicious!!!!
Grilled Vegetables
The mushrooms (1 large packet of white button) and asparagus (1 bunch) were marinated in 1/4 cup olive oil, 1/4 cup balsamic vinegar, 3 cloves galic minced, 3 T onions minced. Then broiled for 5-7 minutes. What a delicious dinner!!!!
